I love a bottle of bubbles – don’t you?  I especially love it when I open one on a Tuesday night for no other reason than I’m in the mood – and since I don’t manage a hedge fund, Cava fits not only my bubbly desire, but my budget as well!

Recently I met up with the winemaker of a Cava that you may recognize – Codorníu.  We chatted (among many things!) about the unfortunate reputation Cava has as a ‘low price’ (and often low quality) choice, but in fact it’s a fabulous fizz made in the same ‘traditional method’ as they do in Champagne.
